The Queen Hotel’s Queen Chow

Head Chef Patrick Friesen shares with the NPBA about Newtown and this years Good Food Fair

Joining the neighbourhood in December last year, Queen Hotel has quickly embraced the Enmore and Newtown community and will be joining with other big locals Young Henrys, Black Star Pastry, Bloodwood, Mary’s, Rising Sun, Salmon & Bear plus many more at the Newtown Good Food Fair.

Head chef of the Queen Hotel’s Queen Chow, Patrick Friesen, sat down with the Newtown Precinct Business Association to talk about his food, what we can expect at the Newtown Good Food Fair and what he loves about being part of the Newtown community.

What about food inspires you? How does this play out at Queen Chow?

My love for food comes from a love of eating. I’m what the Cantonese call a Fei Jai (fat boy). I also love to explore and create. Queen Chow lets me do all of the above. I get to explore a new (to me) cuisine and come up with delicious things to eat.

What can people expect on the day and will it be different from the usual offering at Queen Chow?

We will be doing one of Eric’s signature dumplings as well as a delicious stir fried hokkien noodle which event goers can eat on the go while enjoying the festival.

What do you love about being part of the Newtown community?

Newtown is such an open and inclusive community and it’s great to be a part of and contribute to the cultural mosaic that is our great neighbourhood!
